Mexican cuisine is known for offering a wide variety of flavors and incorporating many vegetable-based dishes. Echoland’s Mexican Diner TacoTaco seeks to maximize the character of traditional Mexican fare through the use of local Shinshu ingredients, including ‘highland vegetables,’ as well as a commitment to seasoning methods that enhance the rich, natural flavors of the ingredients themselves.
To that point, our generously-portioned salads served on large platters, are topped with a special in-house dressing made with heaps of locally-grown Hakuba carrots. One of our most popular dishes, the ‘Shinshu Chicken, Avocado, and Cheese Nachos,’ features the perfect combination of Nagano-raised Shinshu chicken, savory melted cheese, and creamy avocado on top of our crispy homemade chips. Our ‘Wagyu Beef Tacos’ and ‘Chicken and Cheese Enchiladas,’ (tortillas filled with chicken and chili beans and baked with salsa and cheese), are packed with hearty portions of meat and bursting with flavor.
The restaurant itself features spacious tables that can comfortably accommodate couples, families, and larger groups. In addition to our spicy dishes, we offer a variety of vegan and milder menu options, as well as a wide selection of alcoholic beverages that complement our delicious food, including locally brewed Hakuba beer and wines from the popular Northern Alps Vineyard in Omachi City.

TacoTaco’s sister café, JapaMex Café MachiBùs, is located on the ground floor of the Happo Bus Terminal and, true to the TacoTaco concept, serves Mexican fast food such as tacos and burritos made with locally sourced Shinshu ingredients.

The business’ sales brand, Shinshu Shokudo, also produces several varieties of original hot sauces including ‘Wabikara,’ a hot sauce made from chili peppers grown in Hakuba and Otari without pesticides or chemical fertilizers. ‘Killer Hot’ is a new product made with both red chilis and fruit (peach and white grape), while ‘Queen Hot’ strikes a delicate harmony between green chili, citrus juice, and aromatic vegetables. Adding a dash of our sauces is an easy way to elevate the taste of your meal.
