Soba-dokoro Riki has begun serving soba made from this year’s freshly harvested Hakuba buckwheat earlier than usual. Every batch is carefully handmade using only locally grown buckwheat flour. The restaurant’s popular noodles are made from the paler inner portion of the buckwheat kernel, giving them a delicate color along with a rich aroma, firm bite, and natural sweetness. The oyaki (pictured) are another favorite, with dough made by a former professional baker and fillings prepared by a chef. Enjoy them at the restaurant, have some to go, or order them for delivery through the online shop.
