Ryokan Sakaya, a hot spring inn in Nozawa Onsen with a history spanning 18 generations, is known for its cuisine based around local ingredients. Rather than relying on shipped produce, the kitchen uses vegetables and other foods grown in the rich soils of Shinshu, allowing their natural depth of flavor to enhance the seasonal Japanese dishes on offer. The inn’s large bath, built in the traditional public bathhouse style, is filled with all-natural, undiluted sulfur spring water direct from the on-site source. Rates start from JPY17,600 per person for one night with dinner and breakfast, based on double occupancy.
